FAQ
The Beef
Why is your beef different?
With our beef you get to know exactly where your meat is coming from, what it was fed, who cared for it, and where it was butchered. Our herd’s genetics give our cattle the foundation to good marbling, steak thickness, and marbling ability. Combine these genetics with the extra care we take after they are born to provide them with high quality feed, handle them in a calm manner, and harvest them with respect is what pushes our beef to the next level.
Our beef is harvested + butchered at Five Marys Meat Co. in Fort Jones, CA. It is dry aged for at least 14 days
Grass vs. Grain Finished
This is a hot topic and there is no right answer, it all comes down to preference. All cows spend the majority of their life on grass or eating hay in a field, the finishing process is only the 90-160 days before the animal is harvested and this is when the grass vs grain debate comes in to play.
So whats the difference? The taste. Grass-fed beef has yellow fat, darker flesh color and a more “beefy” taste. We love the taste of grass-fed, grain-finished beef so that is what we offer.
Is grain a natural thing for cattle to eat?
If you google this question you will find many different viewpoints, perspectives, and opinions. Our answer is yes. because natural and native grasses produce grains. Grain is actually easier for cows to digest and they produce less methane while eating it. Grain-finished beef are not strictly eating a grain diet though, they are eating grain as well as grass or hay. The grain shortens the finishing process and produces a great marbling on the meat. Great marbling = tender, flavorful meat.
What makes this beef natural?
Our beef is free from antibiotics, growth hormones, beta-agonists, and has never been given any type of animal protein.
What about the environment?
A common misconception is that grass-finished beef is better for the environment but grass-finished beef produce 38% more CO2 per kg of beef than grain-finished beef. This is not to say that grass-finished beef doesn’t have it’s place or contribute to food production in a sustainable way. Both grass-finished and grain-finished beef are sustainable in their own way and the choice between the two comes down to your taste preference.
